Old Fashioned Cup Cakes

  • 2 1/2 cup sifted flour
  • 1 2/3 cup sugar
  • 1 tsp salt
  • 3/4 cup soft shortening
  • 3/4 cup milk
  • 4 1/2 tsp baking powder
  • 5 egg whites (unbeaten)
  • 1/2 cup milk (minus 2 tbs)
  • 1 tsp vanilla

Heat oven 375 degrees. Into large bowl of electric mixer sift flour, sugar, and salt. Drop in shortening. Pour in 3/4 cup milk. Mix. Add baking powder, then egg whites and rest of milk and vanilla.

Beat 2 minutes, fill cups half full.
