Rasberry Bar Cookies
Makes 24 - 2 x 1 1/2" bars
- 1/2 cup room temperature oleo (butter)
- 1/2 cup light brown sugar
- 1 cup flour
- 1/4 tsp baking soda
- 1 cup rolled oats
- 3/4 cup raspberry jam (strawberry)
Heat oven 350 degrees
Line an 8" square pan with foil and butter the foil.
Mix all ingredients together except jam.
Press 2 cups of this mixture in the bottom of the prepared pan. Spread jam into 1/4 inch of the egdes. Sprinkle remaining crumb mixture over the top and lightly press it into the jam.
Bake 35 to 40 minutes. Cool on wire rack before cutting.
