            <description><![CDATA[<p>Nana was the one who got me hooked on Stephen King novels at about the age of 12. She used to tell Mom not to let me read them before bedtime but what did I always see when I spent the night was Nana sound asleep in bed with one of his novels on her chest.</p>

            <description><![CDATA[<p>In the Spring of 1981, Karen Christensen recorded <a href="/media/Interview.mp3">an interview with her father Andrew Christensen (download)</a>, as part of a paper on successful aging for a psychology course. This is a copy of the surviving portion of that interview, conducted at their home on Cherry Street in Geneva, NY, with additional commentary by his wife, Elizabeth. The file is a 30.7 megabyte MP3. Thanks to Karen for the interview and her son-in-law Mark for digitizing it.</p>]]></description>

            <title>Zuchini Pickles</title>
            <description><![CDATA[<ul>
	<li>2 qts thinly sliced, unpeeled small zucchini squash.</li>
	<li>2 medium onions, peeled and thinly sliced</li>
	<li>1 tsp celery seed</li>
	<li>1/4 cup salt</li>
	<li>2 cup vinegar</li>
	<li>2 cup sugar</li>
	<li>2 tsp mustard seed</li>
	<li>1 tsp turmeric</li>
	<li>1/2 tsp dry mustard</li>
</ul>

<p>Combine zucchini and onion, sprinkle with salt, cover with cold water and let stand 2 hours. Drain. Rinse well with fresh water, then drain again. Combine remaining ingredients in a good size pot and bring it to boiling. Cook 2 minutes. Add vegetables, remove from heat and let stand 2 hrs. Bring again to a boil and cook 5 minutes. Seal in hot jars. Makes about 4 pts.</p>]]></description>

            <title>Zucchini Bread</title>
            <description><![CDATA[<ul>
	<li>1 cup shortening</li>
	<li>2 cup sugar</li>
	<li>3 eggs</li>
	<li>3 tsp vanilla</li>
	<li>3 cup + 3 tbs flour</li>
	<li>2 cup grated zucchini (skin + all)</li>
	<li>1/4 cup baking powder</li>
	<li>1 tsp salt</li>
	<li>1 tsp baking soda</li>
	<li>3 tsp cinnamon</li>
</ul>

<p>Bake in 2 greased loaf pans 60 min at 350 degrees F. Optional nuts + raisins.</p>]]></description>

            <title>Yogurt (Chris)</title>
            <description><![CDATA[<ul>
	<li>3 cups instant powdered milk</li>
	<li>1 tbs unflavored gelatin</li>
	<li>1 tbs sugar</li>
	<li>1 large can evaporated milk</li>
	<li>3 tbs yogurt</li>
</ul>

<p>Soften the gelatin. Then add the boiling water, to make 1 cup. Add 1 tbs sugar and let the mixture cool. Mix 3 cups powdered milk with 3 cups of water. Add 1 can evaporated milk. 2 more cups of tepid water, add the gelatin mixture. Add 3 tbs yogurt and stir thoroughly. Cover and put in oven (275--300) then turn heat off and leave yogurt in for 8-10 hours. Store in refrigerator.</p>]]></description>

            <title>Upside Down Cake</title>
            <description><![CDATA[<p>Melt 1/4 lb. butter in a frying pan. Add 1 cup brown sugar and mix thoroughly. Into this place rings of pineapple. Then put cake top on and bake 1 hour in a slow oven. Turn upside down on a platter to serve.</p>

<p><strong>Cake Top</strong></p>

<ul>
	<li>3 egg yolks</li>
	<li>1 cup sugar</li>
	<li>1 cup flour</li>
	<li>5 tbs pineapple juice</li>
</ul>

<p>Mix this thoroughly. Last add the whites of eggs beaten stiff.</p>]]></description>

            <title>Tropical Date Bars</title>
            <description><![CDATA[<ul>
	<li>1 pkg (8 oz) pitted dates, chopped; about 1 1/2 cups</li>
	<li>1 can (8 oz) crushed pineapple (undrained)</li>
	<li>1/2 cup water</li>
	<li>1 3/4 cup all purpose flour</li>
	<li>1 1/2 cup uncooked oats</li>
	<li>3/4 cup packed brown sugar</li>
	<li>1/2 cup flaked coconut</li>
	<li>1 tsp salt</li>
	<li>1/2 tsp baking soda</li>
	<li>1/2 cup butter</li>
	<li>1/4 cup shortening</li>
	<li>2 eggs beaten</li>
</ul>

<p>Combine dates, pineapple and 1/2 cup water. Heat to boiling, reduce heat, cook over low heat stirring occasionally until mixture is thickened, about 5 minutes.</p>

<p>Heat over 375 degrees F. Combine flour, oats, sugar, cocoanut, salt, and baking soda in a large bowl. Cut in butter and shortening until mixture resembles coarse crumbs.</p>

<p>Press 3 1/2 cups of crumbs mixture finely in a greased 9x13x2 pan. Spread with date mixture. Stir eggs into remaining mixture and spread over filling.</p>

<p>Bake until light brown 25-30 minutes. Cool + cut into bars.</p>]]></description>

            <title>Sour Cream Coffee Cake</title>
            <description><![CDATA[<p><strong>Topping</strong></p>

<ul>
	<li>1/2 brown sugar</li>
	<li>1/2 tsp cinnamon</li>
	<li>1/2 tsp nutmeg</li>
	<li>1/2 cup chopped walnuts</li>
</ul>

<p>Double topping for better cake.</p>

<p>Cream together</p>

<ul>
	<li>1 cup sugar (1 1/2)</li>
	<li>1/2 cup margarine (3/4)</li>
	<li>Add 2 eggs (3)</li>
	<li>1 cup sour cream (1 1/2)</li>
	<li>1 tsp vanilla (1 1/2)</li>
</ul>

<p>Sift, measure and add</p>

<ul>
	<li>2 cup flour (3)</li>
	<li>1 tsp baking powder (1 1/2)</li>
	<li>1 tsp baking soda (1 1/2)</li>
	<li>1 tsp salt (1 1/2)</li>
</ul>

<p>Pour into greased + floured 9" tube pan 1/2 batter. Then add 1/2 topping, rest of batter + rest of topping.</p>

<p>Bake 45 minutes at 350 degrees.</p>]]></description>

            <title>Rasberry Bar Cookies</title>
            <description><![CDATA[<p>Makes 24 - 2 x 1 1/2" bars</p>

<ul>
	<li>1/2 cup room temperature oleo (butter)</li>
	<li>1/2 cup light brown sugar</li>
	<li>1 cup flour</li>
	<li>1/4 tsp baking soda</li>
	<li>1 cup rolled oats</li>
	<li>3/4 cup raspberry jam (strawberry)</li>
</ul>

<p>Heat oven 350 degrees</p>

<p>Line an 8" square pan with foil and butter the foil.</p>

<p>Mix all ingredients together except jam.</p>

<p>Press 2 cups of this mixture in the bottom of the prepared pan. Spread jam into 1/4 inch of the egdes. Sprinkle remaining crumb mixture over the top and lightly press it into the jam.</p>

<p>Bake 35 to 40 minutes. Cool on wire rack before cutting.</p>]]></description>
