Bran Muffins

  • 1 1/4 scant cups sugar
  • 1/2 cup crisco
  • 2 eggs
  • 2 1/2 cup flour
  • 2 1/2 tsp soda
  • 1/2 tsp salt
  • 2 cups All bran
  • 1 cup 40% bran 2 cakes
  • 1 cup boiling water
  • 2 cup buttermilk
  1. Cream sugar and crisco. Add eggs and beat. Sift 2 1/2 cup flour, 2 1/2 tsp soda, 1/2 tsp salt.
  2. Pour boiling water overall bran and bran 2 cakes. Add buttermilk.

Mix (1) + (2) alternately.

Pour into muffin pans and bake 15 – 20 minutes at 400 degrees F

Makes about 30 muffins.
