- 1 pkg (8 oz) pitted dates, chopped; about 1 1/2 cups
- 1 can (8 oz) crushed pineapple (undrained)
- 1/2 cup water
- 1 3/4 cup all purpose flour
- 1 1/2 cup uncooked oats
- 3/4 cup packed brown sugar
- 1/2 cup flaked coconut
- 1 tsp salt
- 1/2 tsp baking soda
- 1/2 cup butter
- 1/4 cup shortening
- 2 eggs beaten
Combine dates, pineapple and 1/2 cup water. Heat to boiling, reduce heat, cook over low heat stirring occasionally until mixture is thickened, about 5 minutes.
Heat over 375 degrees F. Combine flour, oats, sugar, cocoanut, salt, and baking soda in a large bowl. Cut in butter and shortening until mixture resembles coarse crumbs.
Press 3 1/2 cups of crumbs mixture finely in a greased 9″ x 13″ x 2″ pan. Spread with date mixture. Stir eggs into remaining mixture and spread over filling.
Bake until light brown 25-30 minutes. Cool + cut into bars.
